Honey-Lemon Roasted Vegetables

Ingredients:


  • 4 cups mixed vegetables (carrots, bell peppers, broccoli, and cauliflower)

  • 2 tablespoons olive oil

  • 2 tablespoons honey

  • Juice and zest of 1 lemon

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • Fresh, chopped parsley for garnish

Instructions:


  • Preheat your oven to 400°F (200°C).

  • In a large mixing bowl, combine olive oil, honey, lemon juice, lemon zest, minced garlic, salt, and pepper.

  • Toss the mixed vegetables in the honey-lemon mixture until they are well coated.

  • Spread the vegetables evenly on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 20–25 minutes, or until the vegetables are tender and slightly caramelized, stirring once halfway through.

  • Remove from the oven, garnish with fresh chopped parsley, and serve as a delicious side dish.
